The winter months are fast approaching, which means colder, shorter days followed by dark winter nights. Sometimes the longer periods of darkness and less-than-ideal temperatures can put a damper on our mood. So we’ve compiled a list of recipes that are sure to add just the perfect amount of sunshine to your day. 1. Mango Margarita Recipe by Love & Lemons

Ingredients:

  • 3 cups cubed frozen mango, from about 4 small mangos
  • ¼ cup lime juice, plus lime slices for garnish
  • 3 ounces silver tequila
  • 2 ounces Cointreau
  • 3 handfuls ice cubes
  • Sea salt for the glass rims, optional

Instructions:

  • Place the mango, lime juice, tequila, and Cointreau in a blender and blend until smooth. Add the ice and blend to the desired consistency. If the mixture is too thick to blend, let it sit and melt for a few minutes.
  • If desired, use a lime wedge to moisten the rims of the glasses and then dip the rims in a small plate of salt.
  • Pour the mango mixture into the glasses and garnish with a lime slice

  • 1½ - 2 ounces tequila
  • 3 - 4 ounces of mango juice

Directions:

  • On a small plate, combine kosher salt and chili powder (or tajin) until mixed. Rub half of a lime on the rim of your serving glass and dip it into the spice mix. Set aside.
  • In a cocktail shaker or jar (or glass if you don’t have either), muddle together mango, lime juice, and jalapeno. Add 3-4 ice cubes and pour in the tequila. Add mango juice and shake (or stir if you don’t have a lid). Add fresh ice to the serving glass; strain the cocktail over the new ice. Top with jalapeno or mango and garnish as desired.

Sometimes, the simplest kinds of cocktails are the best kinds of cocktails. Margaritas on the rocks might sound like something that you can only order at an upscale Mexican restaurant. But they are surprisingly easy to make at home. Luci’s Morsel has provided an uber-easy, totally scrumptious Mango Margarita on the Rocks recipe that you and your guests will love.

Ingredients

  • ½ cup mango nectar
  • ½ cup of good tequila
  • 2 small limes, juiced
  • 2 tablespoons triple sec
  • Ice

Directions:

Combine all ingredients in a shaker. Shake well to mix and chill. Pour over ice.

Taste and See’s recipe is truly one of a kind and one that is not only delicious but beautiful to look at as well. The key to this recipe is using fresh, ripe, fruit for a drink that your guests won’t be able to resist at any time of year!

Ingredients for the mango layer:

  • 1 honey mango, peeled and roughly chopped
  • 2 ounces reposado 100% agave tequila
  • 1-ounce lime juice, freshly squeezed
  • 1 ounce Cointreau orange liqueur

Ingredients for the strawberry layer:

  • 5 large fresh strawberries
  • 1 ½ ounces strawberry liquor
  • 2 ounces reposado 100% agave tequila
  • ⅓ ounce (2 teaspoons) of freshly squeezed lime juice
  • Lime wedges and salt for rimming the glass (if desired)
  • 2 whole fresh strawberries for garnish

Directions:

  • Make the mango layer by adding chopped mango, Cointreau, tequila, and lime juice to a blender and process until smooth.  Pour into a Pyrex measuring cup and set aside, then rinse the blender.
  • Make the strawberry layer by adding strawberries, strawberry liquor, tequila, and lime juice to a blender. Process until smooth and set aside.
  • Rim two glasses with a lime wedge and salt if desired.  Fill each glass about halfway with ice, then pour half of the mango mixture into the bottom of each glass.  
  • Carefully pour half of the strawberry margarita mixture into each of the two glasses, gently pouring it across the back of a spoon or a small spatula.  It will mostly float on top of the mango layer.  
  • To create the yellow/red swirl effect, gently insert the small spatula or spoon down one edge of the glass, and then pull it out. Repeat this step two more times at even intervals around the glass. 
  • Garnish with fresh strawberries or lime wedges.
